Chia Spread

Because of their high nutrition content adding Chia to anything is beneficial but this recipe for a Chia spread is exceptional. Easy to make and store you need to try this one soon.

Very tasty!

2 Tbsp peanut oil
2 Tbsp honey
2 cups raw almonds
2 Tbsp Chia seed

Directions:
Everything goes into a food processor and gets blended on the “high” setting until smooth. Refrigerate until use.

Chia Enhanced Salad Dressing

Here is a really easy recipe for a home made salad dressing. Very low in calories but still big on taste, this is a dressing that can be used in any number of ways.

1/2 cup plain yogurt
1 cup soy milk
2 tbsp white wine vinegar
1 tsp. seasoning blend, salt free
1 tsp garlic powder

This delicious recipe comes from The Gracious Pantry.  I like it not only because it tastes great but also because it demonstrates how adaptable Chia is in almost any recipe. Here, Chia turns a potentially unhealthy, sugar laden, spread into a reservoir of nutrition. Enjoy!

Ingredients
2 cups strawberries – cleaned and chopped
1 cup water
1/4 cup chia seeds
1/4 cup honey

Step 1 – Place all ingredients into a metal pot and bring to a boil.

Step 2 – Reduce heat slightly so the contents of the pot don’t splatter all over your stove, but still bubbles in the pot.

Chia seed lemony oat squaresIn wandering around the web a few days ago I stumbled across this recipe for “Lemony Oat Squares” using, among other ingredients, Chia seed.  Haven’t had the time to try them yet, but thought I should share anyway.

To give credit where its due, both the recipe and the picture comes from a lady named Kris Britton and she has a site called iheartwellness.com. You may want to check it out.

 

Chia Lemony Oat Squares

  • 3/4 cup Quick Oats
  • 1/2 cup Quinoa Flakes
  • rind from half a lemon
  • 1 tbsp Chia Seeds
  • 4 chopped Dates
  • 1/4 cup Warm Water
  • 2 tbsp Coconut Oil
  • juice from half a Lemon

Preheat oven to 350.

Chop dates and let soak with 1/4 cup warm water for 5 minutes.

Mix together the dry ingredients and the lemon rind.

Mash the dates and water together to form a smooth paste.  Stir in coconut oil to melt.

Add lemon juice to the paste and oil and pour into the dry mixture.

Mix well.

Press into 4 bars on a parchment lined cookie sheet and bake for 25 minutes.  According to Kris, “these taste like spring time in your mouth”!
