In wandering around the web a few days ago I stumbled across this recipe for “Lemony Oat Squares” using, among other ingredients, Chia seed. Haven’t had the time to try them yet, but thought I should share anyway.
To give credit where its due, both the recipe and the picture comes from a lady named Kris Britton and she has a site called iheartwellness.com. You may want to check it out.
Chia Lemony Oat Squares
Preheat oven to 350.
Chop dates and let soak with 1/4 cup warm water for 5 minutes.
Mix together the dry ingredients and the lemon rind.
Mash the dates and water together to form a smooth paste. Stir in coconut oil to melt.
Add lemon juice to the paste and oil and pour into the dry mixture.
Mix well.
Press into 4 bars on a parchment lined cookie sheet and bake for 25 minutes. According to Kris, “these taste like spring time in your mouth”!
